Chicken Fried Rice for One... and my dog O


It doesn't happen often, but when it does, the first things I think of are chick flicks, pink wine, and yes, I'd like extra cheese with that thick crust pizza, please.

I'm home alone tonight... well, except for my trusty sidekick.  Yes, this is Ocean, our white boxer.  And believe me, O doesn't mind, he just goes with the flow.  More attention.  More food.  And did someone say pizza?


But, as I picked up the phone, and reached to hit #5 on my speed dial, I started to talk myself out of it.  I'd been eyeing that new Chanel lipstick.  And there were 2 cookbooks I had in my Amazon cart that cost less than the price of that pizza.

And I did have some leftover chicken from the other night, that needed to be used up.  Plus, I could have dinner ready and be eating way before the delivery person would even get here.

So, I put down the phone.  Which was really sad for O, because, oh, how he loves pizza.  

(believe me, this really is his excited face, from the last time we got pizza)

Next time you're home alone for dinner, forget pizza.  And don't even think about the freezer aisle or the fast food lane.  Give this simple, delicious and healthy meal a try.

Even though Ocean didn't thank me, my wallet... and my waistline sure did.



Chicken Fried Rice for One

1/2 c. rice, prepared according to package directions (this will give you about 1 c. once cooked)
1/2 cooked chicken breast, cubed (you can also use steak, shrimp, pork tenderloin or extra veggies)
1/2 c. frozen peas, defrosted
1/2 sweet onion, chopped (I used 1/4 as mine was huge)
1 egg
Olive oil
1/4 tsp. ground ginger
1-1/2 Tblsp. low sodium soy sauce (add more if needed)
Salt and pepper, to taste

In a medium skillet, add in the olive oil and saute the onion until translucent over medium-high heat.  Then add in the egg with the onions and scramble in the remaining oil until just set.  Next add in the cooked rice, cubed chicken, peas, ginger and soy sauce.  Stir to combine, and turn down the heat to medium to heat through.  Check for seasonings and soy sauce and serve.
