Pineapple Cream Cheese Dumplings- Day 2

Yesterday, we received a beautiful gift of fresh honey from a local client, so I couldn't resist creating a special recipe just for them.

And Honey, these Honey, Pineapple, Cream Cheese Won Tons were almost better than the Tri-Tip Asian Fuision Dumplings last night! What an awesome way to use the leftover wonton wrappers, and man, was this easy!

Here's how... Mix 1/2 c. whipped cream cheese, 1/4 c. canned pineapple tidbits (no juice), and 2 tsp. honey. Set aside and heat about 2" oil in a small skillet. Lay wonton wrappers about 6 at a time on a cutting board and add in a dollop of the filling. Use your finger to moisten around the edges with water, and then fold one corner over to create a triangle. Press down edges to seal in filling.

Place in heated oil and fry for about 1 min. on each side until bubbly and lightly browned. (Click here for my previous dumpling post for more in-depth instructions w/photos on the wrapping and frying process!) Remove with a slotted spoon and place on a plate, lined with a paper towel. Once cool, sprinkle with powdered sugar and drizzle with honey.

We LOVED these, and they are so versatile! You could add pie fillings, chopped dried fruits and nuts, marmalade, various extracts like almond or lemon, coconut, different kinds of cheeses, chunks of chocolate or buttermilk chips.. the possibilities are limitless.  Enjoy!
